Introducing our newest installment to Home Brewing Company:

Nomadic Phases: Specialty Bottle Series

We often pull aside small portions of our larger batches to experiment with various other aspects of the brewing process and myriad ingredients. In the past we have released these as simple blank bottles, with a simple tag that only lists the name of the beer and it’s abv. These are some of our favorite beers, and we love opening them for special occasions. It’s time that we gave these beers the attention that they deserve, so we are rolling out a new bottle series dubbed Nomadic Phases. This series of beers will feature various styles and various ingredient/process experiments. The binding factor will be that they are all special to us, and fantastically interesting and delicious.

  • Nomadic Phases with Nectarines – 6.4%
    Saison with French Oak, Nectarines, Peaches & Brett Lambicus
    This bottle features a  portion of our saison fermented with nectarines, peaches, french oak, and wild yeast that we brewed in collaboration with Nomad Donuts. We then bottle conditioned that beer with Brettanomyces Lambicus. The result is a slightly drier saison, with accented notes of stone fruit and white pepper. The first beer Рand namesake Рfor our Nomadic Phases Bottle Series.

Saturday: Getting down to the nitty gritty and do some good ole’ fashion learning, with copious amounts of beer of course.

Mucho Juice-O Collab-O with the Brewing Borrach-Os

This collaboration brew was a 1st Place Win in the Mash Heads Homebrew IPA Competition this year!

An amazing Hazy IPA with Mosaic Cryo and NZ Motuere, coming in at around 6.5-7%,

Ralph Carrasquillo is the man behind this beer, so make sure to give him a high five on release night!

All-Grain Homebrewing 101

All-Grain Homebrewing 101 — from equipment needs to recipe selection, mashing, collecting your wort and troubleshooting common issues. This class is designed for brewers of all levels but please note we will not cover the entire brewing process. Rather, we will focus on the key differences in brewing from all-grain with special attention to the mashing process.

All-grain brewing is the process of brewing with base grains rather than malt extract. There are many considerations in moving to this type of brewing. With the right info, all-grain brewing gives you ultimate control over your beers — not to mention it can be incredibly rewarding.

Topics will include:

Why go all-grain?
Equipment options for all-grain homebrewing
Choosing a recipe and ingredients for your first all-grain brew
All-grain water basics
Temperatures, Malt enzymes and Starch conversion
Mashing, Vorlauf and Sparging techniques
Calculating efficiency
Tools and tips to make your all-grain brew day a success
Troubleshooting common issues

Why Compete?

Homebrew Competitions are a great way to receive feedback for improving your brewing techniques. The main function of a competition is to provide quality advice for making our favorite hobby all the more enjoyable.

What’s the Process Like?

Brewers sign up for each month using the links below, and drop off their beers in anonymous bottles. We review and score the beers based on brewing quality and style accuracy.

Who are the Judges?

Many of our crew are certified beer judges through the BJCP, and/or Certified Cicerones. When needed, we will also use certified judges from our fantastic homebrew community.

What Styles Can I Submit?

It depends on the month. We have a different theme each month. Click the link below for more details, and to sign up!

How Do I Compete?

Step 1. Complete a BJCP Bottle ID Form For Each Bottle – This is VERY important – we need to know what the beer is!

Fine-Tuning and Creative Brewing Seminar

Want to eliminate the dreaded ‚Äúhomebrewed‚ÄĚ taste from your brews? Learn from ¬†multi-award winning homebrewer Brian Trout how to fine tune and creatively modify your beers, meads and ciders. This seminar will focus on transforming your brewday by giving you the tools you need in the form of easy and often overlooked steps. This seminar will elevate your brews from average homebrews to superior craft brews.

There will be a hands-on portion of the seminar where you will be able to “dose” a base beer to practice some of the tips you’ll learn in the seminar.

This is the seminar Brian will be presenting at the 2016 National Homebrewers Conference in Baltimore. You won’t want to miss it!

Brian an active member of San Diego’s QUAFF homebrewing club, president of Queso Diego (cheese making club), a BJCP and mead judge, instructor of numerous homebrewing and cider workshops, and contributing author for BeerAdvocate and West Coaster magazines. Brian has earned numerous regional and national awards, including two best of show mead/cider and two Brewing Machine awards at America’s Finest City Homebrew Competition, MCAB gold, silver and bronze medals, and a silver medal at NHC 2015 in the Sour Ale category.

Beer and Cheese Pairing: Northern Europe

This series of courses explores the affinities for food and beer using cheese as our guide. We will spend time reviewing the basic tenants of beer and food pairing before we turn to some specific examples of beers and cheeses.

Tasting will include a flight of beers following the specific theme listed in the title, and 3-4 classic cheese examples to explore.

We will use this as a platform to facilitate group discussion about tasting and pairing.

Basic Off Flavors

A large part about improving yourself as a brewer is understanding how to identify off flavors, how they are created, and how to avoid them. These skill sets are also important for bartenders, servers, restaurant/bar owners. The average beer consumer should also be aware of how to identify these flaws, and how to politely address the issue if they are served a flawed beer. Not all flaws are equal, and some “flaws” are acceptable to a certain degree in many styles. This course will serve as a building block for building your overall beer knowledge and appreciation. This 1.5 hr class will provide samples of a control beer that has¬†been dosed with the chemical compounds that we associate with the most common off-flavors in beer production¬†and draft dispense. Includes:

  • 6 Off-flavors
  • 1 control beer
  • Guided tasting/instruction
